Yucatan Lemon Soup | Food & Drink Blog

This is a traditional Mexican soup that is usually made with limes. But now people prefer to use Meyer lemons to add a slight twist and gentle flavour. This soup is much filling with shrimp and cilantro and it makes a good entr?e with a salad or starter. The soup is nourishing in nature but it is not ideal for people with allergic reactions to citrus fruits.

Ingredients:
Reduced chicken broth ? 4 cups
Onion (chopped) ? 1
Jalapeno peppers ? 2
Garlic peeled & crushed ? 8 cloves
Meyer Lemon zest grated ? 3 tbsp
Cumin seeds ? 1/2 tsp
Cinnamon stick ? 4 inch piece
Cloves ? 4 numbers
Raw shrimp, peeled & deveined ? 1 pound
Meyer lemon juice ? 3 tbsp
Salt ? ? tsp
Hot sauce ? ? tsp
Fresh cilantro ? ? cup

Yucatan Lemon Soup
Method:

  1. Combine broth, jalapenos, cumin, cinnamon, lemon zest, garlic and cloves and bring it to a simmer. Put the lid on the pan and continue to simmer for 20 minutes. Now strain it well.
  2. Now again boil the broth and simmer. Add shrimp, juice of a lemon, hot sauce or salt.
  3. Cook till the shrimp becomes pink and firm and also about 3 minutes. Add the cilantro before serving.
